Proving is the final rise before baking. Getting the timing right is essential. Even a few extra minutes can lead to over-proving.

Use the finger test:

  • Over-proved: If you press the dough and the indentation remains without any movement, it has risen too far.
  • Under-proved: If it springs back completely with no indentation, it needs more time.
  • Ready to bake: If the indentation slowly springs back halfway, the dough is perfectly proved and ready for the oven.
