Small details can make a big difference to the final appearance.
Egg Wash
For a shiny, golden crust, brush the dough with beaten egg or egg white mixed with a little water before baking. If you forget, you can still apply it about five minutes before the bread finishes baking.
Butter
Brushing melted butter over a loaf just after it comes out of the oven gives a deep golden colour, added flavour and a softer crust.
Milk
Brushing unbaked dough with milk results in a tender crust with a gentle sheen.
Toppings
Brush dough with egg white, then sprinkle with your choice of topping:
- Poppy seeds
- Sesame seeds
- Caraway seeds
- Dried herbs such as basil or oregano
- Onion or garlic flakes
Decorative Slashing
After the final rise, glaze and slash the top using a sharp knife or razor blade. Cut about ½ cm into the dough for a clean, attractive finish.
