These fruity white chocolate cookies are really easy to make and taste delicious. They are ideal for a bit of summer baking and only take 30 minutes.

Ingredients
- 150 gr Butter (at room temperaturte)
- 100 gr Sugar
- 1 Vegetable oil
- 1 tbsp Vanilla extract
- 220 gr Self-raising flour
- 100 gr White chocolate chips
- 100 gr Chopped fruits (select from apricots, grapes, cherries,...)
- 1 tbsp Milk

Instructions
- Heat the oven to 190C. Beat the butter and sugars together until the mixture is light and creamy, then beat in the egg and add the vanilla extract and the milk. Mix the flour into the mixture to make a soft dough, then add the chocolate and fruit and work them in.
- Line a baking tray with baking paper, scoop out the cookie dough in tablespoons and roll each into a ball. Sit these about 8cm apart as they will spread out as they cook. Press a spoon onto each ball to flatten it out slightly. Bake for 15 minutes, or until the cookies are golden but not brown.
- Rest them for 5 minutes before lifting them off the tray onto a rack to cool. Repeat with the remaining mixture.
